I make homemade ice cream using an Icelandic recipe, part of which includes skyr, a very dense yogurt invented by Vikings.
I make my ice cream from A2 milk from local jersey and guernsey cattle. These cattle do not produce the A1 protein that is the source of the problem for roughly half of the people experiencing lactose-intolerance issues.
I produce ice cream for the Safeway supermarket chain and also sell at local festivals such as Viking Fest in the Summer time.
